My garden has produced so much eggplant this summer that I have had to come up with some new recipes! These fries are one of those creations and they turned out really good. I love dipping mine in marinara sauce but you could use ketchup, etc.
Eggplant Fries
1 small eggplant, peeled and cut in strips
1 egg, beaten
1/4 cup seasoned stuffing mix, crushed fine*
1/4 cup Parmesan cheese
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon salt
1/8 teaspoon pepper
olive oil
Preheat oven to 450 degrees F. Spray cookie sheet with oil spray (such as Pam). Place egg in a small bowl. In another small bowl, combine stuffing mix, cheese, oregano, basil, salt and pepper. Dip eggplant in egg, then in stuffing mixture. Place on cookie sheet in a single layer. Bake for 10 minutes. Flip them over and bake another 5 minutes. If desired, serve with your favorite sauce.
*I used Stove Top stuffing mix for chicken and just put in food processor to crush fine
