Pear Apple Cranberry Crisp

I really wanted to call this Orange Almond Pear Apple Cranberry Crisp to get all the flavors of the crisp in it's name.  However, I knew that would be too long a title for this recipe!  So, I just settled for Pear Apple Cranberry Crisp.  This turned out so yummy that I plan on making it for Thanksgiving.  You may want to as well!

You know I like almond flavoring (I use it quite a bit!); but, if you don't like the flavor you can just leave it out or substitute vanilla flavoring.

Pear Apple Cranberry Crisp

Topping:
1 cup oats
1 cup flour
1 cup brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
6 Tablespoons butter

Filling:
4 pears, peeled and chopped
4 apples, peeled and chopped
12 oz. cranberries (either fresh or frozen)
1 orange
1 teaspoon almond extract
3 Tablespoons tapioca
1 1/3 cups sugar

Preheat oven to 350 degrees F.  Butter bottom of 9 x 13" baking dish.  In a bowl, mix the oats, flour, sugar, baking powder and baking soda until combined.  Cut in butter with a pastry blender until you have pea-sized crumbs.

In another bowl, mix the pears, apples and cranberries.*  Squeeze the juice of the orange over fruit and mix.  Add extract and stir.  Gently mix in rest of the ingredients.  Pour into baking dish and spread evenly. 

Sprinkle topping over all.  Bake 60 -65 minutes or until filling is bubbly and topping is golden brown.


*To prevent pears and apples from browning, I kept sprinkling some of the orange juice over them as I added them to my bowl.
