Bean Stew

Bean Stew




Here is my version of a bean stew. . . good and good for you!!








Bean Stew

1 medium onion, minced
1 teaspoon olive oil
1 can kidney beans, drained and rinsed
1 can great northern beans (or any white bean), drained and rinsed
1 can diced tomatoes
1/2 cup zucchini, coarsely chopped
1/2 cup squash, coarsely chopped
2 carrots, sliced
2 potatoes, coarsely chopped
4 oz. can mushrooms, sliced
1/8 teaspoon garlic powder
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon salt
1/8 teaspoon pepper
2 bay leaves
1 Tablespoon lemon juice
2 cups water

Heat oil in soup pot.  Saute onions for 5 minutes.  Add rest of ingredients.  Bring to a boil. Reduce heat and cover.  Simmer for 40 minutes.  Remove bay leaves

Servings:  4 - 6
