With all the picnics and cookouts that I'm sure you will be invited to this summer, I wanted to pass along this recipe. It is so easy to make and will go great with all those hotdogs and hamburgers you'll be eating!
Potato Salad:
4 potatoes
3 eggs
1/2 cup mayonnaise
1 Tablespoon prepared mustard
1/2 Tablespoon celery seed
1/2 teaspoon salt
1/8 teaspoon pepper
1/3 cup sweet pickle relish
Place potatoes in boiling water and boil till tender, about 30 - 40 minutes. Let cool. Place eggs (in shells) in saucepan and add enough water to cover eggs. Bring to a boil over high heat. Reduce heat so water is just below simmering; cover. Cook 18 - 20 minutes. Pour off water. Fill a bowl with ice cold water and add eggs. Let stand for 2 minutes. Drain and let cool.
Peel potatoes and cube. Chop up eggs. Put in large bowl. In a small bowl, mix mayonnaise, mustard, celery seed, salt and pepper. Add to potato mixture and mix lightly. Stir in relish. Cover and refrigerate for several hours.
