Have you ever eaten homemade mushroom soup before? Well, you have to try this one! My mother-in-law served this to us when we were visiting her the other day and I really, really liked it. In fact so much that I made it for dinner tonight! It doesn't use a lot of ingredients and cooks fast especially if you use quick cooking barley like I did.
Mushroom Barley Soup
6 cups chicken broth
1 cup barley
8 oz. mushrooms, chopped
1/2 cup onion, chopped
2 Tablespoons butter
2 Tablespoons parsley
salt and pepper, to taste
Boil the chicken broth and then add the barley. Simmer for 30 to 45 minutes (or for 10 - 12 minutes if using quick cooking barley) until soft.
In the meantime, saute mushrooms and onion in butter till tender. Add to broth mixture along with parsley. Boil for 10 minutes. Add salt and pepper.

Note: This soup is on the thicker side. almost more like a stew. If you would like a thinner soup add more chicken broth.
