Cole Slaw

For the picnic you may be going to (or having!) in honor of Memorial Day, here is a fast side dish to make.


Cole Slaw

Cole Slaw
1 medium cabbage, cored & shredded
2 carrots, grated
1/2 cucumber, chopped
2 Tablespoons onion, diced
2 cups mayonnaise
3/4 cup sugar
1/4 cup yellow mustard
1/4 cup apple cider vinegar
1/2 teaspoon parsley
2 Tablespoons celery seed
1 teaspoon seasoned salt
1/8 teaspoon pepper

Mix cabbage, carrots, cucumber and onion in a large bowl.  In a separate bowl, mix rest of the ingredients making sure the sugar is dissolved.  Pour mayonnaise mixture over cabbage mixture and gently mix until all is combined.  Refrigerate until ready to serve (actually it tastes better if you let it chill for a while to give all the flavors a chance to blend).
