Chicken Cordon Bleu

Would you like to serve a fancy meal without all the fuss?  Here's one to try that looks like you fussed but no one has to know that you really didn't!

3 large chicken breasts
9 slices deli ham
9 slices swiss cheese
1 egg, beaten
3/4 cup cracker crumbs
1/2 teaspoon oregano
1/2 teaspoon parsley
1/2 teaspoon basil
1/8 teaspoon pepper



Preheat oven to 350 degrees F.  Pound chicken thin and cut into 9 pieces (3 pieces per breast).  Lay slice of ham and cheese on each piece.  Roll up and secure each piece with a toothpick.

Place egg in shallow bowl.  In another shallow bowl, combine crumbs, oregano, parsley, basil and pepper. Dip chicken pieces in egg and then crumb mixture.



Place in a greased 9 x 13" pan. Bake one hour or until tender.  (Be sure to remove toothpicks!)


Servings:  9 pieces
